Gluten-Free Walnut-Baked Chicken

Walnut Baked Chicken

Serves 4


1 cup Living Now® Organic Brown Rice Flour
1 tsp. salt
2 eggs, whisked
2 tsp. water
4 tsp. BetterStevia® Lemon Twist Liquid
2 cups NOW Real Food® Walnuts, finely chopped
1 cup parsley, finely chopped
4 boneless, skinless chicken breasts


  1. Place oven at 350° F.
  2. Create 3-step breading system.
  3. In bowl 1 combine brown rice flour with salt.
  4. In bowl 2 combine egg, water, and stevia.
  5. In bowl 3 combine walnuts with parsley.
  6. Dust chicken breast in bowl 1, drench in bowl 2, and cover in bowl 3.
  7. Place chicken breast on parchment paper and in the oven for 25 minutes.
  8. Serve warm with steamed vegetables.
